
Smoked Chicken Quarters
Instead of grilling, try smoking the Chicken Quarters this time. Use these few simple tips from BBQ Pit Boys - they’ll come out tender and moist every time.
The ingredients you'll need:- Chicken Quarters – 6-8, 1 ¼ lb. each
- Plastic Bag – 2 ½ gallon
- Italian Dressing – 1 bottle
- BBQ Sauce – 1 bottle
Ingredients for Marinade:
- Canola Oil – 2 cups
- Vinegar – ¼ cup
- Italian Seasoning – 2 teaspoons
- Salt – 1 tsp.
- Beer or water – 2 Tbsp.
Directions:
GETTING READY
- Wash and dry each piece of chicken
- Trim fat off but leave skin on
- Place chicken in a large baggie
- Combine ingredients of marinade in a bowl
- Stir in bottle of Italian dressing
- Pour marinade into plastic baggie
- Seal bag and rotate until well mixed
- Place bag of chicken in refrigerator for at least 6-8 hours
MAKING
- Bring smoker temperature to 275-300 degrees Fahrenheit
- Place leg quarters on smoker for one hour
- After one hour rotate chicken for even cooking
- Cook for another hour then flip so skin side is facing down
- Smoke for another 30 minutes
- Remove chicken from grill and place in a large bowl
- Cover chicken with your favorite BBQ sauce
- Place chicken back on smoker, skin side up for another 30 minutes
- Sauce again
- Continue to cook until skin reaches desired doneness
FINALIZING
- Remove from smoke and allow to rest for a few minutes
SERVING
- . Serve with potato salad, baked beans, and corn on the cob
